1. Growing
Our coffee trees grow at 1,500–2,000 feet elevation on the volcanic slopes of Mauna Loa, where rich soil, afternoon cloud cover, and warm Kona mornings create the ideal microclimate for exceptional coffee.
2. Hand-Picking
Every cherry is hand-selected at peak ripeness — a labor-intensive process that ensures only the finest fruit makes it into your cup. Our family and team walk each row of trees multiple times per season.
3. Processing
Freshly picked cherries are pulped within hours of harvest to remove the outer fruit, then fermented to loosen the remaining mucilage. Timing and precision here directly shape the flavor in your cup.
4. Drying
Washed beans are spread on raised drying beds and sun-dried for 1–2 weeks, turned regularly to ensure even moisture reduction. This slow, careful drying preserves the bean's natural complexity.
5. Milling
Once dried, the parchment layer is removed through dry milling, and beans are sorted by size and density. Only beans that meet our strict quality standards move forward.
6. Roasting
We roast in small batches to order, dialing in each roast profile to highlight the natural brightness and sweetness of our Kona beans. No blending, no shortcuts — just pure estate coffee.
